Babies in August, September, October

All my GREAT friends at Heather's baby shower. She is due just 2 or 3 weeks after me in October, but you can't really tell she is pregnant (fourth one from the left). Also, our other friend in Boise had her second baby girl this morning. Congrats Lindsay!

Well, here is my baby bump at 35.5 weeks! Yes, I have to count the half weeks. It's a countdown to September 27!

Jackson here we come

Teton Village in the Summer is pretty sweet turns out. I still like it covered in snow better.
We stayed in Victor, ID, about 20 miles from Jackson, in early August for the weekend. 

Jason got to bike from Victor over the Teton Pass and we met him in Jackson for the day. It was beautiful as you can see. A lot is always going on at Teton Village. This day there was downhill mountain bike races and a relay race.

 Jackson is one of my favorite places in the winter and summer. Also, if you ever stay in Victor, we highly recommend grabbing breakfast at the Sun Dog Cafe. If you don't mind the wait. Yum!!

easy to grow

I just added another easy to grow item to my small, non-existent, sometimes potted, sometimes planted in the ground, garden I like to attempt each and every year. Radishes! Super fast to grow (maybe a month) and came out great from a big pot. Yahoo!

Now on the easy to grow list: radishes, basil, carrots, peas, raspberries (maybe, not sure yet).

Sun Valley

We love little weekend trips. We went to Sun Valley in early July to check out the National Championship Mountain Bike race at the ski resort. It was a fun weekend.

We were lucky to see some friends at the bike race. Carter was especially lucky since he really likes his buddy Caden, who is only 8 months younger. They had a BLAST together!

I think Carter was more scared on the gondola ride (enclosed) going up then he was on the chair lift ride going down. How funny. Love Carter's face here.

 They were free that day and these boys took advantage! I think they each had 4-5. By the 3rd to 4th cone they were standing in line and getting the Bank sponsor ladies to give them one all on their own. The bank ladies thought the "brothers" were so cute and took a pic of them.
 So cute!!
On our way home Sunday we went through Copper Basin. It was a very pretty drive. 
Jason did a little exploring on the back roads.

Lasgna Recipe

I love when I find a yummy, healthy, and EASY recipe that all three of us like (not easy to do). When I find a good one, I must share.

This is the second time I've made this. This time I made a half recipe (used 9 noodles) and it was the perfect size for Jason, Carter, and I with some leftovers. It's a vegetarian recipe, but I'm sure if you replaced the tofu with meat, or left the tofu out, it would be equally good. Just shoot for meatless Monday's! : )

Lasagna Roll Ups

Ingredients

  • 1 (16 ounce) package uncooked lasagna noodles (I like whole grain noodles-see picture below, which are actually a little more firm and easier to roll up anyway)
  • 1 pound mozzarella cheese, shredded
  • 1 (15 ounce) container ricotta cheese
  • 1 pound firm tofu
  • 1 (10 ounce) package frozen chopped spinach - thawed, drained and squeezed dry
  • 2 cups grated Parmesan cheese
  • 1 (28 ounce) jar pasta sauce
    I add:
    sliced mushrooms
    onion (to taste) - I used dried, minced since I don't love a lot of onion and it's easy
    garlic (to taste)
    fresh basil if you have it around

    Directions

    1. Bring a large pot of lightly salted water to a boil. Cook lasagna noodles for 5 to 8 minutes, or until just slightly underdone; drain and rinse with cold water and lay flat.
    2. In a large mixing bowl, mix together grated cheese, ricotta cheese, tofu, frozen spinach, and 1 cup Parmesan cheese.
    3. Lay out a noodle. Spread a layer of the cheese mixture on the noodle, then add a thin layer of sauce. Roll the noodle up, and place seam side down in a 13x9 pan. Repeat for other noodles. Top with remaining sauce and Parmesan cheese.
    4. Bake in a preheated 350 degree F (175 degree C) oven for 30 min, or until hot and bubbly.

Not sure if this looks appealing, but it's my real pic just out of the oven. A little bit watery from the spinach and/or tofu, but easy to scoop no problem with a spoon with slots.

Trying to stay cool in the backyard. This summer is WAY TOO HOT!
Growing yummy raspberries. Haven't seen anymore since this day though. Is it too hot for raspberries?

What did you find? A snake. "Ewwwwwww" says Mom. "Cool" says Carter and Dad. : )
